Ayla is a privately-owned washing station in Ethiopia’s Sidama zone, located in the village of Bombe within the Bensa district. Managed by Testi Coffee, a family-owned company founded by Mr. Faysel A. Yonis, the station sits at 1,950 meters above sea level and produces high-quality washed and natural processed coffee. Around 725 small-scale farmers deliver fresh coffee cherries daily, farming organically on tiny plots. The region’s high elevation and cool climate are ideal for slow ripening, resulting in denser beans with a sweeter, more complex flavour profile.

Heirloom coffee refers to Arabica varieties, particularly from Ethiopia, that are difficult to classify. With thousands of unique varieties, the term is often used when a producer’s output doesn't fit neatly into other coffee categories.

PROCESS

Natural (Dry)

During the natural or dry method, the entire coffee cherry is dried with the beans inside, allowing the fruit to naturally ferment and impart flavour to the beans. Once dried, the outer layers of the cherry are removed, revealing the green coffee beans.
