Produced by the Mierisch family of Fincas Mierisch, multi-generational coffee growers cultivating in Nicaragua since 1922, this lot reflects over a century of dedication to quality, innovation, and sustainability. Their Matagalpa farm employs 61 permanent team members and up to 400 seasonal workers during harvest, supporting both community and craft at origin.

Yellow Pacamara

This is a botanical unicorn. The "Yellow" Pacamara is a rare spontaneous mutation discovered by the Mierisch family on their own land. Pacamaras are notoriously difficult to grow and usually have savoury, herbal notes. By processing it as a "Red Honey" (leaving the sticky fruit flesh on while drying), they have successfully masked those savoury notes with intense fruit sweetness.
