Their commitment to quality starts with hand-picked, optimally ripe cherries and continues through careful processing, fermentation, slow drying, milling, and sorting. Red Catuai, a hybrid of Mundo Novo and Caturra, is known for its bright acidity, medium body, and sweet, fruity flavor profile with hints of citrus and caramel. It’s versatile, thriving in various climates, and is best used for both specialty single-origin coffees and balanced blends.

PROCESS

Washed

During the wash method, the outer skin and pulp of the coffee cherry is removed through depulping, leaving behind the mucilage-covered beans. The beans are then fermented to remove the mucilage before being washed and dried.
