• The Story: Our benchmark for traditional regional character. Sourced from high-altitude smallholder farms, this lot relies on flawless washed processing to let the clean, crisp acidity of the fruit take centre stage.

EXPERIMENTAL | Colombia, Rafael Aya

• Process & Variety: Washed Caturra

• Flavour Profile: Jasmine, Passionfruit, Brown Sugar, Orange

• The Story: This classification is where our roastery team plays with the rules. Sourced from the La Virginia estate, this lot pushes the boundaries of traditional Colombian Caturra, delivering a vibrant, fruit-forward cup that completely subverts expectations. 

RARE | Nicaragua, Fincas Mierisch

• Process & Variety: Red Honey Yellow Pacamara

• Flavour Profile: Passionfruit, Clean, Delicate

• The Story: Produced by the renowned Mierisch family, this is an exceptional micro-lot that is incredibly difficult to secure. The oversized Yellow Pacamara beans are dried slowly using a precise red honey process, locking in concentrated sugars for an intensely rich flavour experience.
