Everyone goes through coffee at their own rate, but as a rough guide, we recommend:

At 80 years old, Sharbo Maro stands as the oldest coffee farmer in Mokonisa village, Yirgacheffe county, where he continues a legacy inherited from his grandparents. Passing his heritage to his son Daniel, Sharbo has notably grown his farm to 7.0 hectares, far surpassing the typical size for smallholders in Ethiopia. Alongside traditional landrace varieties, he is adopting newer varieties such as 74110 and Kurume, gradually phasing out the Wolisho variety.

Kurume, 74110, Wolisho

Kurume is an Ethiopian heirloom varietal known for its vibrant acidity and fruity, floral notes. It's a small-bean coffee often grown in higher altitudes, contributing to its unique flavor profile. Wolisho is another Ethiopian varietal, typically larger-beaned, also offering complex flavours with fruity and floral characteristics, often with a distinct herbal undertone.

Washed

During the natural or dry method, the entire coffee cherry is dried with the beans inside, allowing the fruit to naturally ferment and impart flavour to the beans. Once dried, the outer layers of the cherry are removed, revealing the green coffee beans.
