I'm from the beautiful Ponderosa estate located in Cordillera, Boqueron, Chiriqui, Panama in the Baru National park (on the west side of the Volcano Baru). The Ponderosa estate is managed by Ratibor Hartmann of the "Hartmann Estate". This farm was focused mainly on the Geisha varietal, but in recent times has planted up to 6 different vareitals.
Gilberto Cardoze is the farmer who took care of this particular Geisha lot. Once the cherries are picked and delivered they are hand sorted, floated, pulped and then fermented overnight. Wet parchment is then run through serpentine and floaters removed. Once separated, the coffee is washed with one more rinse then placed out on sorting tables for removal of any defects and is laid out to dry on raised beds for up to 28 days until the ideal moisture content is achieved.
